I'm making tamales again. This time instead of corn shucks, collar greens are being used to wrap them. Why is this Tex-Mex Soul Food? Well I'm from Texas and everybody knows collar greens are soul food. And the Mexican part is the tamales(yes, I know tamales are made all over South America). I wish I could take credit for this concoction but I can't. On a trip to San Luis Potosi, Mexico with a good friend, Alejandro "Alex" A. Alvarez I first saw this type of tamale being made. We stayed with some of Alex's family. One night we were invited over to another household of the same family and Alex's aunt made tamales wrapped in collar greens. They were delicious. Why are you making tamales? My wine tasting club asks all members to bring a dish and tonight was the meeting. Of course, I like to take out of the ordinary treats to these affairs. There were two wines I enjoyed. One was a chardonnay from Columbia Crest, Grand Estate and the other a Riesling, Hogue, from Washington State.
