Tonight I had a great recipe for a sheppard's pie, but Margo suggested something lighter. So here's something a little healthy for the old diet. Margo saw something like this in the clubhouse restaurant. She good at duplicated dishes found in restaurants. There's not meat in the veggie burger seen above. Here's the recipe. 1 Red Bell Pepper 1 Yellow Bell Pepper 1 large onion cut into large wedges 3 large porabello mushrooms 1 large tomato 1 bunch of fresh spinach 1 loaf of bread such as foccasia( anything wide and flat) 1 cup of mozzarelli cheese 1/4 cup olive oil Start by remove the stems of the mushroom. You can marinade them in Italian dressing for about an hour or just rub them with a little olive oil seasoned with italian herbs . De-seed the peppers and cut each into 6 wedges. Rub them lightly in olive oil also. Put mushrooms and pepper on flat cookie sheet. Broil them until peppers are a little charred on both sides. Remove when done. While peppers and mushrooms are cooking put about 1 tablespoon of oil in a skillet. Heat on high and place onion into pan. Once onion is about to carmelize place fresh washed spinach into pan also. Stir, cover and continue to stir until spinach has barely wilted. Yeah, you might have to take the top off to stir. The cover helps to kept in the steam. Remove from skillet and place aside when done. Cut tomato into about 8 slices. Discard top and bottom slices. Heat about 1 tablespoon of oil in skillet. Fry each tomato slice just enough to heat throughout. Remove from skillet and set aside. We're almost done. Now cut loaf of bread into 3 equal pieces. "Iqualmente" as they say down in old Mexico. Cut each of those lengthwise as if you were to make 3 sandwiches. Place a little oil into skillet and toast inside of each piece of bread. We now build the open face sandwiches. Add one tomatoe slice to each piece of bread. Onto three of the pieces of bread add a whole mushroom. Three sandwiches won't have mushrooms. Next add a piece of yellow and red pepper to each. Then add some spinach and onion mixture. Finally add a little cheese to the top of each. Turn the broiler back on and toast all the sandwiches until cheese turns a little brown. Enjoy!
