We don't eat much red meat around our house, which means a lot of chicken and fish. Eating a lot of chicken means trying a lot of different methods to cook it. We don't do "fried" much either. One of my favorite ways to cook a bird is to set it on a can of beer and just bake as normal. In a kitchen store you can find holders which will marry the chicken and beer can. It doesn't have to be a can of beer, by the way, I've used a can of grape juice. The principle is the same. A can of liquid in the cavity of a baking chicken keeps the moisture in. Ben's parents, sister and little nephew were over for dinner so I decided to go the beer chicken route. I also did my pan seared talapia thing. Margo baked a cake and it was a good time for all. Lhann, my son-in-law, had surgery today. Maya says everything went well and expects him to be released for home tomorrow.
